An afternoon with the Masters… Luke Shilling

Luke Shilling has been in the hospitality for over 12 years. It started at 16 with a job at a Sizzler Restaurant washing dishes and food preperation. From there, Luke continued in hospitality by working on Daydream Island in housekeeping, porter and Room Attendant. It was during this time that Luke decided to pursue his love for classical guitar and went to study at the Conservatorium of Music.

However, Luke didn’t stay away from hospitality long and started to work in cafes, bars and restauarants ranging from, waitstaff, kitchen hand and barman. It was here when Luke got exposed to the coffee scene and was captivated by it and decided to put his music career on hold. Since then  Luke has never looked back with the last 8 years focused solely on the coffee industry.

During this time, Luke has worked in many coffee establishments developing his skills as a barista and at the same time finding a passion for teaching. Luke has designed and conducted training for café baristas, the home barista as well as demonstrations for schools, workshops and expos.

Luke has also spent many years competing in barista competitions and is the recipient for many awards including runner up for 2007 Australian latte art championship. Luke now on the judging panel for AASCA Barista Championships.

In recent time, Luke has set up Ltd espresso and brew bar which took out the No.1 Coffee spot on Beanhunter for 2013. He has also produced and published the widely successful ‘The Barista Effect’ DVD, A beginner’s guide to preparing espresso coffee. ‘The Barista Insight’ An in-depth look at pouring latte art.
