Monbana, a French chocolatier house was founded in 1934 by Louis Guattari and has remained a family business to this day. Monbana sources their cocoa beans from the Ivory Coast, Ghana, Venezuela and Peru. One specialty is their development of cocoa butter, cocoa powder, roasting and pressing their own beans. Joining CSR Golden Bean from France is Geoffroy Maubon, Monbana’s First Barista who will delight us by preparing his delectable, chocolate based beverages. Bon appétit.

Topic: Coffee Roasting Thermodynamics

Mark Beattie from Coffee Roasters Australia

Insights into heat transfer in coffee roasting and how this might affect the performance of your roaster and the outcome of your coffee. Heat distribution is the main variable manipulated when roasting coffee. The results can vary greatly between the different types of equipment and methods applied. Roasters need a good understanding of thermodynamics to better understand their equipment and the effect it has on the coffee roasted in it.

Q Grader Certification Now In Australia

Q Grader Certification courses are now being offered exclusively in Australia by Coffee Logic International. The Q Coffee System was established by the Coffee Quality Institute (CQI), a non profit organisation working to improve the quality of coffee and the lives of the growers who produce it. When a coffee moves through the Q Coffee System and becomes verified as a Q Coffee™, it signifies an independent confirmation of quality and is then deemed specialty.

According to the Specialty Coffee Association of America’s (SCAA) standards, a coffee that receives a score of 80 or above is considered specialty. Q Coffee™ provides an assurance of quality that the industry can trust.

At the backbone of the Q Grading System are licensed Q Graders – professional cuppers accredited by the Coffee Quality Institute.
