The Rise of Micro Roasters

As the popularity of coffee increases in Brisbane, large franchise coffee groups are now making way for the micro roasters. And an unprecedented demand from the Brisbane public for smaller coffee houses is on the rise. The likes of which, is usually found in Melbourne and Sydney. It seems that destination coffee has hit the streets of Brisbane city and suburbs.

One coffee bean importer and roaster who is riding the wave of this new found trend, is Brendon Baxter, owner, of Baxter and Sons Coffee Roasters. Located in the northern suburb of Everton Hills, Brendon is sourcing, importing and roasting quality green beans. And creating and upsurge in interest, in micro roasting. A master roaster in this own right, he imports the best quality beans from farmers around the world. And by roasting the beans in his retrofitted warehouse, he is extracting the perfect blend of flavours.

Beginning his coffee career 15 years ago, whilst working for the Merlo coffee brand, he discovered his passion for coffee. And under the guidance of Dean [Merlo], he pursued further training and understanding in the art of coffee roasting.

From his early successes at Merlo coffee, he ventured out on his own. Beginning with selling fresh green beans online, due to a lack of suppliers, Brendon then decided that he wanted to invest more in where the beans originated. And to find the highest quality beans possible.

Initially he thought of sourcing from local Australian growers. However with the growing conditions for quality coffee beans not right in Australia he decided to source the product from other countries.

Travelling to coffee growing destinations in South America, he began to form a close relationship with the growers. And with this close relationship he was able to garner quality coffee beans.

Sourcing the raw coffee beans from as far away as Kenya, Columbia and Costa Rica, Brendon states, “It’s all about getting back to basics.”

Further adding, “And we can help improve the livelihood of the farmers which is a feature that we like, and supporting their families. Also, this relationship helps us get some of the best beans in the world”

“We can provide quality roasted beans, direct to local cafes, giving them the opportunity to produce great coffee.”

With his instinctive roasting, Brendon is achieving the perfect blend of flavours. His mild roasting of the bean, allows the natural flavour of coffee to come through in its purest form.

Although not the largest supplier of roasted coffee beans, Brendon is in a league of his own. And taking head on the public demand for superior coffee. From his initial online business, where he was roasting approximately 300kgs in a week, they are now roasting over a ton. And within the same timeframe. Brendon has come a long way, within a few years from his early beginnings.

Staying true to the production of coffee and perfecting the roasting, he is continuing to develop the public knowledge on coffee’s true taste. Avoiding trendy coffee flavourings, he is keen to keep the simplicity of the coffee flavours coming through.

From educating the public in roasting their own beans at home to supplying cafes with the best roasted coffee, word is starting to spread. The Baxter and Sons Roasters headquarters has never been so busy.

People are coming from all over Brisbane for their cafe espressos, brewed by his champion barista Joffe, making Baxter and Sons Roasters Coffee one of the best coffee destinations in Brisbane.
