PERCI N2 (Ninety Plus Gesha Estates – Panama)

Think Tank Coffee came about as a natural progression of Craig Simon’s interest in all things coffee. His years of experience in roasting, cupping, knowledge of processing methods, developing close bonds with producers and not least of all, being a successful part of the world’s barista competition circuit, culminated in his business as a coffee consultant and wholesaler of rare and special coffees. Craig brings some of the world’s most exclusive and exciting coffees into the hoppers of his clientele.
Think Tank is the Australian distributor of Ninety Plus coffees, known as true innovators and leaders in coffee flavour profiling, led by frontman Joseph Brodsky. As a man obsessed with experimentation, he finds a like-minded partner in Craig. Craig has experienced the research, careful planning, experimentation and stringent control over the various stages of processing from harvest to shipping at Ninety Plus’ Gesha Estates in Panama. Earlier this year he participated in their Maker Series programme, during which time he harvested his own coffee and developed a first-time hybrid processing method for it, then competed with it at the World Barista Championship 2014 in Rimini Italy, finishing 4th in the world.
Craig is immensely proud that the first medals awarded to Think Tank for roasting excellence were at its inaugural entry into the Golden Bean roaster competition awards industry event, receiving:
• Gold medal in the Espresso category for the Ninety Plus Perci N2
• Silver medal in the Milk Based category for the newly created Think Tank Coffee Seasonal Blend
• Silver medal in the Single Origin Coffee category for the Ninety Plus Perci N2
• Silver medal in the Espresso category for the Ninety Plus Lycello W2
At the international coffee show in Melbourne this year, Think Tank’s Ninety Plus coffees generated an unprecedented amount of interest, which saw the entire stock sell out well before the conclusion of the show. The coffees represented there are indicative of what to expect in 2015:
